Peanut Dipping Sauce
Use with satay skewers, summer rolls, grilled meats or raw or grilled veggies!
Ingredients
1 cup canned coconut milk
½ cup peanut butter
4 tsp. Brown sugar
1 Tbsp fish sauce
1 Tbsp soy sauce
1 Tbsp red curry paste
½ cup hot water
2 tsp. Lime juice or rice vinegar, or to taste.
Directions
Combine all sauce ingredients in a medium saucepan.
Cook, stirring occasionally, over low heat until the flavors are well blended, about 15 minutes.
Stir in lime juice or rice vinegar to taste.
