Mexican Street Corn Salad
Great for a potluck or a Mexican-themed party.
Ingredients
5 ears corn grilled and kernels removed
2 to 3 pieces grilled zucchini optional
½ cup fresh cilantro leaves finely chopped
⅓ cup red onion finely diced
1 jalapeño seeded and chopped
3 to 4 dashes Tabasco, Cholula or similar hot sauce
1 to 3 teaspoons Tajin, or to taste
½ to 1 teaspoon garlic powder
2 to 3 tablespoons mayonnaise + more if desired
2 to 3 tablespoons 2% plain Greek yogurt + more if desired
Cotija or feta cheese finely crumbled
juice from 1 lime
serve with tortilla chips
Directions
Using a large mixing bowl, mix together all of the ingredients from the grilled corn to the fresh lime juice. Mix together, taste and adjust any ingredients as needed. If a creamier Mexican Street Corn Salad is desired, add more mayo and yogurt. Serve with tortilla chips and enjoy!
Notes
*If you don't have Tajin, you can use the Everything But The Elote Seasoning Blend from Trader Joe’s, or add cumin, chili powder, and garlic powder to taste.
