Tuscan Sausage, Kale, and White Bean Soup
Simple to make. Healthy and satisfying!
Ingredients
1 cup diced onion
1 cup diced celery
1 cup diced carrot
2-3 cloves minced garlic
1 lb. Italian sausage
1 bunch of kale, taken off stems and chopped
2-3 Yukon Gold potatoes, diced
2 cans white cannellini beans
1-2 bay leaves
1-2 T Italian Seasoning (or a combination of oregano, basil, thyme, rosemary)
2 boxes chicken broth
Salt and pepper to taste
Directions
In a large pot, sauté onion, celery, carrot and garlic in oil of choice.
Add sausage (remove from casings if needed), separate into small chunks, and continue to cook.
When meat is nearly done, add herbs, chicken broth, kale, potatoes, and beans. Bring to a boil, then lower heat to simmer until potatoes are soft. 10-15 mins.
Salt and pepper to taste.
