Rice Pilaf
Such a great side dish, goes with practically everything! Pair with protein and a salad, and dinner is served!
Ingredients
2 T olive oil
1 cup jasmine rice or 1 cup long grain rice
¼ cup pine nuts or sliced almonds
3 scallions, chopped. Separate white and green parts.
1 clove garlic, minced
1 medium carrot, small diced
2 cups broth of choice
½ cup frozen peas
Salt and pepper to taste
Directions
Heat oil in frying pan. Add rice and nuts, stir around until slightly toasty. Add white parts of scallions, garlic, and carrot. Stir until slightly softened.
Add broth and come to a boil. Reduce heat to a simmer, cover and cook 15 minutes.
Add frozen peas, stir, and cook 5 more minutes or until rice is cooked and peas are heated through.
Salt and pepper to taste.
Garnish with green part of scallions.
** If you want your rice to have more of a yellow color, add ½ tsp. ground turmeric before adding broth.
