BBQ Ribs
Delicious ribs that are first baked in the oven to tenderize and then finished on the grill to get that perfect smoky flavor and caramelized crust.
Ingredients
2 racks of pork ribs (baby back or spare ribs)
1/4 cup yellow mustard
1/4 cup apple cider vinegar
1/4 cup olive oil
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
2 teaspoons smoked paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon cayenne pepper (optional, for heat)
1 cup barbecue sauce (your favorite brand or homemade)
Directions
Prepare the Ribs:
Preheat your oven to 275°F (135°C).
Remove the membrane from the back of the ribs for more tender meat. Use a knife to lift the edge of the membrane, then grab it with a paper towel and pull it off.
In a bowl, mix together the yellow mustard, apple cider vinegar, olive oil, Worcestershire sauce, brown sugar, smoked paprika, garlic powder, onion powder, ground black pepper, salt, and cayenne pepper if using.
Marinate and Bake:
Rub the mixture all over the ribs, coating them well.
Place the ribs on a baking sheet lined with aluminum foil, meat side up. Cover them tightly with another layer of aluminum foil to seal in the moisture.
Bake in the preheated oven for 2.5 to 3 hours, or until the ribs are tender.
Preheat the Grill:
Preheat your grill to medium-high heat (about 350°F/175°C).
Grill the Ribs:
Carefully remove the ribs from the oven and discard the top layer of foil.
Brush the ribs generously with barbecue sauce.
Transfer the ribs to the preheated grill.
Grill the ribs for about 10-15 minutes, turning occasionally and basting with more barbecue sauce, until the ribs are nicely charred and caramelized on the outside.
Serve:
Let the ribs rest for a few minutes after grilling to allow the juices to redistribute.
Cut the ribs between the bones and serve hot with additional barbecue sauce on the side.
You can prepare the rub and marinate the ribs a day ahead to allow the flavors to penetrate the meat more deeply.
If you prefer a smokier flavor, add soaked wood chips to your grill.
