Swedish Meatballs
We traditionally serve as part of Christmas Eve smorgasbord, although I would eat these any day of the week! Sorry Ikea… these are better! (Note that these call for both beef and pork.)
Ingredients
1 pound ground beef
1 pound ground pork
½ cup panko bread crumbs
2 tablespoon parsley chopped
½ teaspoon ground allspice
½ teaspoon ground nutmeg
½ cup onion finely chopped
1 teaspoon Garlic Powder
¼ teaspoon Pepper
1 teaspoon salt
2 eggs
2 tbsp. olive oil
10 tbsp. butter
6 tbsp. flour
4 cups beef broth
2 cup heavy cream
2 Tablespoon Worcestershire sauce
2 tsp. Dijon mustard
salt and pepper to taste
Chopped parsley, to garnish
Directions
In a medium sized bowl combine ground beef and pork, panko, parsley, allspice, nutmeg, onion, garlic powder, pepper, salt and egg. Mix until combined.
Roll into balls about 1 oz each. In a large skillet heat olive oil and 2 Tablespoon butter. Add the meatballs and cook turning continuously until brown on each side and cooked throughout. Transfer to a plate and cover with foil.
Add 8 Tablespoons butter and flour to skillet and whisk until it turns brown. Slowly stir in beef broth and heavy cream. Add worcestershire sauce and dijon mustard and bring to a simmer until sauce starts to thicken. Salt and pepper to taste.
Add the meatballs back to the skillet and simmer for another 1-2 minutes. Serve over egg noodles or rice, garnish with chopped parsley.
