Pork Chili Verde
This delicious and comforting dish features tender pork in a rich, flavorful green sauce made from tomatillos, green chilies, and various seasonings. It's seriously the bomb, according to Patrick.
Ingredients
2½ lbs pork shoulder, cut into 1½–2 inch chunks. Ask your butcher or go to the Mercado!
Salt and pepper generously
2 tsp cumin
2 tsp Oregano
2 tsp coriander (optional but yum)
1 tbsp oil
1½ lbs tomatillos
1 large white onion
2 poblano peppers
1 jalapeño (seeded for medium heat)
2 Anaheim chilis
NOTE: You can use any combination of peppers/chilis you like according to your taste and desired heat.
3–4 garlic cloves or to taste
½ cup cilantro
Juice of 1 lime
1 cup chicken broth or use water + chicken boullion
Directions
Prepare the Pork:
Season the pork chops with salt, pepper, and spices. Mix around to encorporate.
In a large pot or Dutch oven, heat the oil over medium-high heat.
Working in batches, add the seasoned pork cubes and brown on all sides, about 5-7 minutes. Remove the pork and set aside.
Deglaze pan with some chicken broth or water.
As pork is cooking, broil tomatillos, onion, peppers/chilis & garlic 8–10 minutes until lightly charred. You can also roast in 500 degree oven, or even do on your outdoor grill using a grill pan that will save your juices.
Let veggies cool slightly. Blend vegetables with their juices in blender with: cilantro, lime, broth, and salt or chicken bouillon. You may need to do in batches.
Add pork back into the pot and the add blended sauce. Simmer until fork tender, 2-3 hours?
Finish and Serve:
Fresh cilantro, chopped
Avocado, diced or sliced
Lime wedges
Sour cream, chips, tortillas, extra salsa, queso fresco or cotija cheese...
Steamed rice or Mexican rice
If you want a thicker sauce, you can add 1 cup of crushed tortilla chips for the last few minutes of cooking. Use low sauté if you are using an InstaPot.
NOTE: This can also be make in the InstaPot (Use sauté feature to brown the pork. 35 minutes on high pressure, then natural release for 10-15 minutes.) Also crock pot works wonderfully for this recipe! (Just brown the pork first.)
