Turkey Soup
After Thanksgiving dinner is done, it's the perfect thing to make.
Ingredients
Turkey bones and carcass, with most of the meat removed. It’s ok if there is some stuffing etc. still clinging on.
1 cup diced onion
1 cup diced celery
1 cup diced carrot
2-3 cloves minced garlic
2-3 cups pre-cooked rice. Rice can be slightly underdone so it doesn’t get mushy in the soup.
1-2 bay leaves
1-2 T Herbs de provence or other herbs of your choice. (thyme, sage, basil, parsley, etc.)
Salt and pepper to taste
Directions
In a very large pot (or a covered turkey roaster) place all ingredients and cover with water. Simmer 1.5 - 2 hours.
Remove turkey carcass and bones. Remove any meat and add back into the soup
Add extra turkey meat from your leftovers, if desired.
Let soup cool slightly, then add pre-cooked rice. Noodles may also be used, but make sure they are pre-cooked, and add them after soup has cooled enough so that noodles don't get mushy.
