Garlic Honey Soy Glazed Chicken Thighs
You could really use any type of chicken with this recipe... I like the juiciness of chicken thighs!
Ingredients
1.5 lbs boneless, skinless chicken thighs
Salt and pepper to taste
2 tablespoons olive oil
For the sauce:
1/4 cup soy sauce
1/4 cup honey
3 tablespoons rice vinegar (or apple cider vinegar)
3 cloves garlic, minced
1 tablespoon grated fresh ginger (or 1 teaspoon ground ginger)
1 teaspoon sesame oil
1 tablespoon cornstarch
1 tablespoon water
Prep the Chicken:
Season the chicken thighs with salt and pepper on both sides.
Cook the Chicken:
Heat olive oil in a large skillet over medium-high heat.
Add the chicken thighs and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the Sauce:
In the same skillet, reduce the heat to medium. Add the minced garlic and grated ginger, sauté for about 1 minute until fragrant.
In a small bowl, whisk together the soy sauce, honey, rice vinegar, and sesame oil.
Pour the mixture into the skillet and bring to a simmer.
Thicken the Sauce:
In another small bowl, mix the cornstarch and water to create a slurry.
Slowly pour the slurry into the sauce, stirring constantly until the sauce thickens, about 2-3 minutes.
Combine and Serve:
Return the chicken thighs to the skillet, spooning the sauce over the top to coat them well. Cook for an additional 2-3 minutes to heat through.
Serve the glazed chicken thighs over steamed rice or with your favorite vegetables, garnished with sesame seeds and chopped green onions if desired.
Feel free to add some chili flakes or sriracha to the sauce if you prefer a spicy kick.
You can also garnish with toasted sesame seeds, sliced scallions, or fresh cilantro for extra flavor and presentation.
