Creamy Caesar Dressing
Easy to whip together - so good you’ll never buy bottled again!
Ingredients
2 small garlic cloves, minced
1 teaspoon anchovy paste or 1-2 anchovy fillets (can be found near canned tuna in the supermarket)
2 tablespoons freshly squeezed lemon juice, from one lemon
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 cup mayonnaise (I use ½ regular mayo and ½ Japanese mayo)
½ cup freshly grated Parmigiano-Reggiano
¼ teaspoon freshly ground black pepper (no extra salt is needed - anchovies and parmesan have plenty of salt already.)
Directions
Whisk all ingredients together, or use a blender or small food processor (my preferred method). Store in the refrigerator.
Classic Caesar salad is just chopped Romaine lettuce and croutons tossed with the dressing. This dressing is good on any salad, however!
Add leftover chicken, steak or shrimp to make it a meal.
