Shepherd Salad
This is a “measure with your heart” type of recipe. I give the ingredients - you include the amounts you like. Leave out what you don’t. Hearty, crunchy, nourishing, and satisfying!
Ingredients
Tomatoes
Cucumbers
Red onion
Olives (black, green and/or Kalamata)
Feta Cheese (Use Traditional Greek)
or goat cheese, if you prefer
Cooked lentils
Cooked quinoa
Chopped parsley
Chopped dill
Sunflower seeds
Artichoke hearts
Serve with Lemon Caper Vinaigrette or dressing of your choice.
Directions
Toss all ingredients together. Serve with Pita or Naan bread, if desired. Will last 2-3 days in refrigerator.
