Basic Fruit Cobbler
A fruit cobbler is a dessert consisting of a layer of sweetened fruit filling topped with a biscuit-like dough, which is spooned or dropped over the fruit before baking. The result is a soft, tender topping with a golden crust, complementing the
juicy, flavorful fruit underneath.
Ingredients
Fruit Filling:
4 cups fresh fruit (peaches, berries, apples, etc.), peeled and sliced if necessary
1/2 cup granulated sugar
1 tbsp lemon juice
1 tbsp cornstarch (optional, for extra thickening)
1 tsp vanilla extract
Cobbler Topping:
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar
1 tsp baking powder
1/4 tsp salt
6 tbsp unsalted butter, cold and cubed
1/3 cup boiling water
Optional Topping:
2 tbsp granulated sugar
1/2 tsp ground cinnamon
Directions
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Fruit Filling:
In a large bowl, combine the fruit, sugar, lemon juice, cornstarch (if using), and vanilla extract. Mix well to coat the fruit evenly.
Transfer the fruit mixture to a greased 9x9-inch baking dish or a similarly sized baking dish.
Make the Cobbler Topping:
In another bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
Stir in the boiling water until just combined, creating a dough.
Assemble the Cobbler:
Drop spoonfuls of the dough over the fruit filling, spreading it out as evenly as possible.
If desired, mix the optional topping ingredients (sugar and cinnamon) and sprinkle over the dough.
Bake:
Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the fruit filling is bubbly.
Cool and Serve:
Allow the cobbler to cool slightly before serving. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
