Good Old Pasta Salad
There is nothing 'old' about this recipe except for the fact that it's tried and true. Everything inside is fresh and yummy! This is a 'cook and measure with the heart' type of dish. Use your favorite ingredients and dressing. These are some suggestions.
Ingredients
1 pkg of your favorite salad pasta such as rotini, bow tie, or penne, etc.
3 cups Veggies - chop peppers, tomatoes, cucumber, zucchini, onion, scallion, carrots, radishes...
1 cup Olives or pickled peppers (such as banana peppers or pepperoncini)
1-2 cups Cheese - salty Parmesan, fresh mozzarella pearls, feta, or any cubed or shredded cheese you like.
1/2 cup herbs - chopped fresh parsley or basil (optional)
Dressing
Use your favorite vinaigrette (homemade or bottled), or use this recipe:
1/3 cup red wine vinegar, white wine vinegar or champagne vinegar
1/2 teaspoon fine sea salt, plus more to taste
1/2 teaspoon fresh ground black pepper
1/2 teaspoon dried oregano
2 to 3 tablespoons juice from pepperoncini jar, optional
1/2 cup extra-virgin olive oil
Directions
Cook the pasta according to package directions. Rinse and cool.
Mix the dressing ingredients, unless you are using bottled.
Mix all ingredients together, adding just enough dressing to coat the ingredients. Let sit for a few hours to chill and absorb flavors. Add more dressing if pasta seems too dry after chilling.
This salad keeps well in the refrigerator, covered, for about 4 days.
