Satay Skewers
A variety of proteins work here. Yummy peanut dipping sauce!
Ingredients
½ cup canned coconut milk
1 large shallot, chopped
2 Tbsp. brown sugar
2 Tbsp. fish sauce or soy sauce
2 garlic cloves, chopped
1 tsp. ground cumin
1 tsp. ground coriander
1 lb. protein of choice: (shrimp, chicken, beef, pork, or tofu)
For Peanut Dipping Sauce:
1 cup canned coconut milk
½ cup peanut butter
4 tsp. Brown sugar
1 Tbsp fish sauce
1 Tbsp soy sauce
1 Tbsp red curry paste
½ cup hot water
2 tsp. Lime juice or rice vinegar, or to taste.
Directions
For Satay
Process coconut milk, shallot, brown sugar, fish/soy sauce, and garlic in food processor or blender until smooth.
Cut protein (except shrimp) into desired size for skewering/eating.
Marinate protein of choice in the mixture 1 hour at room temperature, or up to 24 hours in the refrigerator.
An hour before cooking, soak about 20 6-inch long bamboo skewers in water to cover.
Thread protein onto skewers. Grill or broil to desired doneness. (Just a few minutes.)
For Peanut Dipping Sauce
Combine all sauce ingredients in a medium saucepan.
Cook, stirring occasionally, over low heat until the flavors are well blended, about 15 minutes.
Stir in lime juice or rice vinegar to taste.
Serve skewers with dipping sauce and extra veggies, if desired. Garnish with chopped parsley or cilantro, if desired.
