Chicken Noodle Soup
Best medicine and comfort food.
Ingredients
1 cup diced onion
1 cup diced celery
1 cup diced carrot
2-3 cloves minced garlic
Olive oil
1 whole chicken
1-2 bay leaves
1-2 T Herbs de provence or other herbs of your choice.
Salt and pepper to taste
1 pkg egg noodles, pasta, or rice, precooked.
Directions
In a large pot, saute veggies in oil until semi-softened.
Add chicken and cover with water. Bring to a boil.
Simmer, half covered for about 1 - 1.5 hours or until chicken is falling apart.
Remove chicken from the pot and let it cool. Turn off soup.
When chicken is cool, take the meat off the bones and add back to the pot.
Add precooked noodles or rice.
