Mom’s Famous Chili
Winner winner chili dinner! Serve with corn bread or muffins. This makes a big batch, so cut recipe in half if you don’t want as much. Freezes well, too!
Ingredients
1 onion, diced
1 cup carrots, peeled and diced
1 cup celery, chopped
1 bell pepper (any color), chopped
2 lbs ground meat (turkey, beef, Beyond if you want meatless)
3 (14 oz) cans diced tomatoes (include juice) or equal amount of fresh.
3 (14 oz) cans of beans of your choice (black, pinto, kidney, or a combination). Dump in beans + liquid, it’s all good.
2-3 packages of chili seasoning OR a mix of the following. Start with 1 Tbsp each and add more according to your taste.
Chili powder
Cumin
Oregano
Smoked Paprika
Red Pepper Flakes (If you want spicy. Be careful.)
Optional: Jalapeno peppers, again depending on the spice level you desire.
Directions
Sauté onion, carrots, celery, and bell pepper in a small amount of olive oil.
After a few minutes, add the meat and cook about ½ way.
Add the tomatoes.
Add the beans. Rinsing the beans is optional.
Add the seasoning and spices.
Bring to a light boil, then reduce heat to medium low.
Simmer, ½ way covered, for 30 minutes.
Serve with:
Sour cream, chopped green onions, shredded cheese, sliced jalapenos, avocados, and/or tortilla chips.
