Eggs Benedict
If you want to make a decadent, special breakfast for an egg lover, this it it!
Ingredients
4 slices Canadian bacon or 8 slices regular bacon, cooked
2 English muffins, split and toasted
Hollandaise Sauce (see recipe link)
Directions
Cook the bacon. Set aside
While eggs are poaching, make the Hollandaise sauce.
Assemble the Eggs Benedict. Place bacon on a toasted muffin half. Place poached egg on top of bacon. Pour some Hollandaise sauce on top of the egg.
Sprinkle with salt and pepper, and chopped parsley (optional) for garnish.
